How perogies are served
Savory perogies are often served with sour cream, fried onions or both, or with melted butter and small pieces of fried bacon and mushrooms. In Canada, where perogies is the local name, kielbasa and sometimes a creamy mushroom sauce join them.
Build the plate
Boil them, then fry them in butter if you want crisp edges. Put one creamy thing on top and one sharp thing beside them: cabbage, a salad or a sour soup. With meat on the plate, a few perogies take the place of potatoes.
- Fry the onions first and keep them warm. They take longer than the perogies.
- For a crowd, keep boiled perogies warm in a covered dish with butter and fry them in batches as plates go out.
