What it is served with, country by country
Beef stroganoff is sautéed pieces of beef in a sauce of mustard and sour cream, often with mushrooms. In Russia crisp potato straws are its side dish. In Brazil it comes with white rice and shoestring fries, and in Japan with white rice, sometimes seasoned with parsley and butter. In Britain it is rice, tagliatelle or potatoes, and in the United States wide or twisted egg noodles. In Finland diced brined pickles go into the dish.
Build the plate
Pick one thing to go under the sauce. Add something sour, a pickle or a vinegar salad, to cut the cream. Finish with a green herb on top.
- Butter the noodles or rice lightly and serve the stroganoff beside them, so everyone takes as much sauce as they like.
