How corn tortillas come to the table
Corn tortillas are served warm, because a cold one turns rubbery. They are the base of tacos, tostadas, enchiladas, chilaquiles and tortilla soup, and a warm stack also sits beside stews, soups and grilled meats the way bread does in other kitchens. Taco stands set out radishes, lime, salt and pickled chilies.
What to eat corn tortillas with, fresh or a day old
Fresh and soft, fold one around a filling and add a salsa. Overlap two tortillas when the filling is wet. A day-old stack is better fried or simmered: cut it up for chilaquiles or crisp it for tostadas.
- Warm each tortilla in a dry pan until it puffs a little, then keep the stack wrapped in a cloth.
Questions and answers
What do you eat corn tortillas with?
With almost any Mexican meal. Fold them around al pastor, tinga, beans or eggs for tacos, or tear one and scoop up mole or a stew. In Aztec times they were eaten with each meal, plain or dipped in mole or a chili sauce.
What can I eat with corn tortillas for breakfast?
Eggs. Fried eggs on a tortilla with salsa are huevos rancheros, and scrambled eggs with crisp tortilla pieces are migas. Chilaquiles are a traditional Mexican breakfast, and enfrijoladas are often served then too.
What to eat with a corn tortilla if you do not eat meat?
Refried beans and cheese, melted Oaxaca cheese, huitlacoche or eggs with salsa. Meatless taco fillings in Mexico include mushrooms, potatoes, rice and beans, and enfrijoladas come in a bean sauce with cheese, onion and cream.
What do you drink with corn tortillas?
Without alcohol: horchata, prickly pear water or pineapple water, all poured over ice.
