How moi moi is eaten

Moi moi, also spelled moin moin, is a steamed bean pudding. It is eaten alone as a snack, with rice as a meal, or with pap, oatmeal, custard, salad, koko or garri. Koko is a millet porridge. Some cooks stir shredded chicken, corned beef, sardines or sliced boiled egg into the batter before it is steamed.

Build the plate round it

Moi moi is soft and filling, so it does the work of meat. On a dinner plate it sits next to the rice and wants something crisp or cold beside it: fried plantain, fried yam or salad. At a party it shares the table with small bites.

  • Unwrap moi moi at the table. The leaf or foil keeps it warm and moist until then.
  • For a party tray, cut each wrap into thick rounds so the egg in the middle shows.
