The plate in South India
Dosas are served hot, either rolled up as a wrap is or folded in two. Beside the sambar and chutney, common sides are Indian pickles and idli podi, a coarse powder of lentils, chilies and sesame that is mixed with sesame oil or ghee. A masala dosa is roasted crisp and filled with potato curry.
What to eat with dosas of other kinds
Neer dosa, a crêpe of rice batter, is usually served with coconut chutney, sambar and chicken, mutton, fish or egg curry. Pesarattu, the green gram dosa of Andhra Pradesh, typically comes with ginger chutney or peanut chutney. Benne dose, the butter dosa of Karnataka, gets more butter on top and coconut chutney.
Ask for the chutneys in separate bowls. A crisp dosa goes soft where a wet chutney sits on it.
Choose one wet thing and one dry: sambar or a curry for dipping, podi or pickle for a sharper bite.
Questions and answers
What can I eat with dosa besides sambar?
Any chutney: coconut, tomato, peanut or ginger. With no chutney in the house, podi or a spoonful of pickle will do, and a bowl of vegetable kurma or leftover curry turns a dosa into dinner.
What curry goes with dosa?
Chicken curry and egg curry are both on this list, and a thin tamarind curry suits a soft dosa. For a plate without meat choose vegetable kurma.
What do you put inside a dosa?
Beyond the potato filling of a masala dosa: spiced paneer, spinach paste, mushroom masala or vegetables in Schezwan sauce. An egg can also be cooked straight onto the dosa.
Is dosa eaten for breakfast or dinner?
Both. Masala dosa is a popular breakfast in South India and is served at all times of the day.
What do you drink with dosa?
Without alcohol: filter coffee, made with hot milk and sugar, at the end of the meal. With hot chutneys, cold spiced buttermilk is the cooling choice.
